Chicken Salad Recipe
The recipe is actually my friend Brenda's chicken salad recipe, but I did this for a swap so I figured if I didn't put my name on the recipe, they wouldn't know who Brenda was. LOL Anyway, I've made the recipe a couple times and it is very delicious if you like chicken salad like me. Here is the recipe if you cannot view it:
Chicken Salad by Nancy Endwright
4 chicken breasts
2 (3 oz. pkg. cream cheese, softened)
1 cup seedless grapes
1 c. Miracle Whip (mayo)
1 c. diced celery
¾ c. frozen peas, thawed
Cook chicken breasts. Cool. Remove from bone; shred. Mix cream cheese and mayo until blended. Set aside. Cut seedless grapes in half. Dice celery.
Combine chicken, grapes, celery and unthawed peas in bowl. Add mayo mixture and mix well.
Add more mayo to reach right consistency for chicken salad. Chill. Serve on chilled lettuce leaves.
The stamp set I used is "A Good Egg' which is a favorite set of mine and I'm so happy that is not retiring in August. The cardstock used is from the current In-Colors Wild Wasabi and Blue Bayou. The Designer Series Paper is Porcelain Prints. The ribbon is Blue Bayou double-stitched ribbon. I assume all will retire when the new catalog comes out. The recipe was typed on the computer and printed out on copy paper. I used the Scallop Punch and made "doodles" around the edge with the White Gel Pen and attached the little chicken with dimensionals. I hope you like my recipe card. I hope to start making a lot more of recipe cards using favorite recipes of mine and my friends.
